Sitting in a cafe overlooking a mountain of ham and two over easy eggs supported by a solid base of fried papas (potatoes). The Spanish have done some interesting things here in Cholula. So many churches dot the this little town, such was the resistance to the imposed christian religion by conquititdor Hernan Cortes. Across the road is the Cholula Pyramid topped off by the Santuario de la Virgen de los Remedios (Our lady of Remedies)  Church. Well, if you can't beat em' join em'.
